Sometimes the best recipes come to you when you least expect them. A few weeks ago, I purchased IamCookieLand’s incredible sugar lace recipe (and if you’ve been following me, you know how much I love it!). As a surprise for being the very first person to grab her new recipe, she emailed me an extra treat—a recipe for her Bounty Brownie Cookies.
Of course, I had to try them right away… and WOW. These cookies are everything I love in a sweet bite: rich chocolate flavor, chewy coconut goodness, and the perfect soft, fudgy texture. Honestly, they remind me of an Almond Joy candy bar—but in cookie form, and dare I say… even better.
I whipped up the dough (video coming below for you to watch), rolled it out, cut the cookies, and baked them. Within minutes, my kitchen smelled like pure heaven. I left a plate out for my husband and son to try without saying a word. A little while later, they both came up to me—completely unprompted—and declared these were the best cookies they’ve ever had. My husband even warned me that if I keep making these, we’re all going to be in trouble.
If you’re a chocolate and coconut fan, trust me—you need this recipe in your life. I’m officially obsessed, and I have a feeling these will be making many appearances in my kitchen from now on.
